Lemony Feta Dip

We're headed into warmer weather (just ignore the snow the other night) and it's making us crave lighter and brighter flavors. This Lemony Feta Dip would be a great addition to any backyard bash and it's incredibly simple to whip up. You can also throw in some fresh herbs from your garden or we like it with chopped artichoke hearts.

To make this dip you will need:
 2 cups feta cheese, crumbled
1 tablespoon + 1 teaspoon lemon zest, grated
1/4 cup fresh lemon juice
1 garlic clove, minced
3/4 cup olive oil
2 teaspoons red pepper flakes
minced fresh herbs, such as rosemary or thyme (optional)

Using a food processor, blend the feta, zest, juice and garlic until slightly chunky. Use a rubber spatula to scrape down the sides of the bowl. Add olive oil and blend again. Garnish with pepper flakes. Serve with fresh veggies or crackers.
